“I think induction is finally having its moment,” says Paul Hope, the home and appliance editor at Consumer Reports.
It's long been thought 'Cooking With Gas' is synonymous with speed and efficiency. But did you know some scientists compare the risks of gas stove use to that of having a smoker in the home?
Scientists have identified particles from gas contribute to—and worsen—asthma and other respiratory conditions. The Consumer Product Safety Commission (CPSC) is investigating this link, but The Washington Post reports that some cities have already moved to ban gas stoves in certain new homes and apartments.

A 2023 Houzz study reports 92% of homeowners are choosing sustainable options during kitchen renovations, and more than half are out of environmental concerns.
Some benefits of induction cooking:
Induction cooktops don’t emit indoor pollutants
The cooktop itself remains cooler
Heats quickly and maintains a steady simmer
Easier to clean with no removable grates or burners to get under or around to scrub
Induction cooktops are becoming more affordable and the Inflation Reduction Act allocates money so consumers can claim rebates on the purchase of electric appliances, as well as additional compensation for converting from natural gas to electric.
While the move from gas to electric may not be any time soon, in our humble opinion, gas cooking is as dated as this 'cooking with gas' campaign.
